Ingredients

– 2 large potatoes, chopped
– 6 leeks, sliced
– 3 garlic cloves, minced
– 3½ tbsp Carapelli 100% Italian EVOO
– 1 tsp salt
– ¼ tsp ground black pepper
– 1¾ cups chicken or vegetable broth
– Chives for garnish”


Directions

1 Heat olive oil in a pot. Sauté garlic until golden.

2 Add leeks and cook for a few minutes. Add potatoes and cook until slightly golden.

3 Season with salt and pepper. Add broth and cover.

4 Simmer for 20 minutes until vegetables are soft.

5 Blend until smooth. Serve with a drizzle of olive oil and chopped chives.
