– Zucchini

– Carapelli Extra Virgin Olive Oil

– Parmesan cheese (shredded)

– Walnuts

– Fresh arugula

– Salt flakes to taste


1 Cut the zucchini into very thin slices (mandoline).

2 Dry the zucchini slices with a paper towel.

3 Place it on a plate in a circle shape.

4 Top with walnuts and parmesan flakes.

5 Add fresh arugula and dress with olive oil and salt flakes.
